But when we emerged upon thebankaof the Great Kanawha the man of the woods lout hit interval and the man of the fields taw little that waa rumfoeting. When we cram the line into Kentucky, I aaid, we shall tee a change. But no. see did not. The farmer still groaned in spirit; no thrifty farms, no substantial homes, no neat villages, no good rumU anywhere, hut mjualor and sterility on evety hand. Xearly all the afternoon we rode through a country like the poorer parts of New England, unredeemed by anything like New fungland thrift. It waa a country of coal, a very new country, geologically speaking, and the top soil did nut seem to have had time to become diwjiened and enriched by

vegetable mold.

Near sundown, aa I glanced out of the window. I thought I began to tee a change. Presently 1 was very sure I did. It tagan to appear in the more gratae character of the woods. It had taken all these millions upon millions of year* to pre]are the way for this little plant to grow to perfection. 1 thought I had never seen fields and low hills look so soft in the twilight; they seemed clad in greenish gray fur. As we neared Mount Sterling how fat and smooth the land looked; what long, even, gently flowing lines against the fading western sky, broken here and there by herds of slowly graxing or else reposing and ruminating cattle! What peace and plenty it suggested! Prom a land raw and crude and bitter like unripe fruit we had suddenly been transported into the midst of one ripe and mellow with the fullness of time. It was sweet to look upon. I was seized with a strong desire to go forth and taste it by a stroll through it in the twilight. -•John Burroughs in Century.

r my own use 1 prefer for iu flavor aud quality lieef tea made in the following manner: Take a pound of the round of beef or any juicy lean )iart; cut small pieces, and |mtting it in a jamr over it one pint of cold water. Let it stand half an hour or more, as convenient ; then put it in a broad basin, aud as it begins to heat press tlu- meat wit^ the back of a silver or wooden spoon, until all the juice U cxpivwd. If the water cooks away add a little from the teakettle, so as to have the same quantity when done. Season it with a little salt and p-pper, if allowable, and heat as needed.
