CENTRAL AFRICAN COOKERY.

. ..1 0 (I

As s rule only our principal meal is den in central Africa—in the early part -of the evening. It nsoallv consists of parrot nonp, roasted or stewed monkeys. nIUgalor eggs (also well Hked by Europeans) and birds of every description. They also have tnoarobo, or palm chops, an.1 fish. A gnat delicacy, so considered bv Eorojunr.* and native* alike, is elephant's fivt and trunk. Thew have sumewhat the taste of veal. To prepartthem the natives dig a bole about five feet deu|> in the sand, and in it build s Urge fire. After the sand is thoroughly heated the fire is removed, leaving only the ash« in the hole. The trunk and fuel are )Jared in this bole and covered with leaves, and afterward with hot sand. In two hours they are done. All carcasses of animals which are to be cooked ate placed on a block of wood and pounded until every bone is broken, rare being taken not to tear or bruise the I skin. They are then boiled or roasted on an open wood fire or in hot sand or ashra, ; without removing the hide or feathers. The cooking is of a very inferior grade, the only spices used being salt and pepper.

Africans have several vegetables well Kked by Europeans. N'gntti-n'nengo is a dish eaten all over Africa. It consists of egg plant, small fish sumewhat like our sardines and the roots of the cassava or maniocs plant (called n’gntti), which have a jenotty appearance and often weigh as much as twenty pounds. As the latter contains poison the maniocs is soaked in water for three to four days to extract the jioisonons substance. It is then cut and sliced and small tomatoes are added. All is placed in a Yiwnel with water, and seasoned with salt and pepper and boiled. Moambo. or, as the European* call it. palm chops, is also a favorite dish. The palm nnts are first boiled in water until the pulpy substance loosens from tht- pit, then the shell, which contains a very diliciona oil. is placed in a wooden mortar and crashed to obtain the oil. Whatever the meal comdsta of—meat, fish, mussel* —is pet in a vessel, adding the oil and the pulpy J art of the [aim nnt, also red I'l’Pcr and salt, and is boiled. Riant or ladled Squash (loengv) is generally eaten with it Sweet [iotatoes (mlalla benga) are more farinaceous and sweeter than oar*, bnt do not taste so good. They are boiled or roasted. Bananas (bitacbr) weigh about half a pound each and nre about fifteen inches long. When half ripe they are cut in shoes and boiled in water with salt and
