People who look on the department of agriculture as a mere ornamental frill on the government might attain wisdom by glancing over the annua] report of the secretary, which was aubmltted to the president a few days ago. Among the various projects la which the country U engaged they would find these The production of a new variety of hardy orange, which may be grown In nearly every southern state and which is likely to become “a feature of every dooryard throughout the south.” The breeding of new kinds of cotton. Including an early maturing variety and one that la furnished by nature with protection against the boll weevil, and the Importation of the Guatemalan ant to destroy the weevil. The establishment of ■‘diversification farms" In the south to convince the southerner that he can advantageously plant other crops than cotton. The distribution of nitrogenfixing bactarta. which fertilise exhausted soils at a cost of one cent an acre. The development of a system of agriculture to meet the needs of the semi-arid lands. Including the raising of s drought-resist-ing wheat as well as of kaffir corn, alfalfa and other crops. The use of an extremely dilute solutldn of copper sulphate to purify drinking water and to destroy the bacteria producing typhoid fever and Asiatic cholera. The mapping ef the various soils of agricultural land •o that the farmer may be guided in securing the best results from his work. These are only a few of the numerous undertakings to which the experts employed by the department of agriculture are giving their attention. It would be difficult to overestimate the value of their work to the "United States.
Evil of Overeating.
Our preeent food standards are absolutely false, our knowledge of nutrition Is faulty, our ability to answer truly the simpler dietetic questions Is doubtfnl. This very pessimistic view of the science of feeding, reports the New York Globe, is that of Prof. B. H. Chittenden, one of the leading physiological chemists of the United States. What has long been a matter of popular belief, and urged by numerous books on feeding, namely, that pretty much everyone eats too much. has. It seems, been proved by the recent researches of Profs. Chittenden and Atwater. It baa beeen shown that the excess of food is not easily and cheaply gotten rid of. but requires for its removal an elaborate series of complicated chemical combinations, and a very large accompanying expenditure of energy. The excess of nitrogenous foods, which are chiefly meats, are the most difficult substances to eliminate. The obvious moral of this U that while the majority of us would bebetisaf ff if w ate less of everything, ft iTIlerUcularly harmful constantly to overload the system with meat. The old Chinese proverb that most men dig their graves with their teeth Is not so much of an exaggeration as It sounds In this connection the wide attention which the diet, chiefly rice, of the Japanese soldiers is now receiving is of special Interest, for tt may result in very radical changes of the regular army ration and In method of feeding paupers and eria-
