Archer Stackhouae, principal of the ■ 1 Gape May County Vocational School in Agriculture, has been conducting, during the winter in connection with the school work a series of milk and cream con- j, tests which have piWVen of great value j. to dairymen and others and will he ex- _ tended during the next term. j: Under the system out of a total possible score of 100 points, .36 are allowed for the bacterial count, 25 for the flavor and odor of the milk, 10 for the absence of visible dirt, 10 for percentage of fat, 10 for percentage of solids not fat, 5 for aridity* tod 5 for the appear- - ance and condition of the bottle and cap. J To obtain a perfect score for the bacterial count the milk must Contain g than 500 bacteria per cubic centimetcK^ A bacterial count above the local legal limit results in a wort of 0. The deductions from the possible store of £> for flavor and odor are made according to the conditions found. This iB also true p of the examination for risible dirt- - For this the milk is allowed to remain for some time undisturbed aad the bot- f torn is then examined very closely for •he slightest movable speck. Four per cent, or more of fat in the milk results in a perfect score of 10; less than 2.7 ^ , per cent, 'n 0. To obtain a perfeit score for the solids not fat, the percentage _ must be 8.7 or more, and less than 7.8 j e per cent, is counted 0. In the esse of cream there is no credit for solids not fat. and the percentage of fat counts 20 i points instead of 10. To obtain a perfect score for acidity, the percentage ( ■ must be 0.2 or less. More than 0.24 per i cent is counted 0. The educational value of these eon- ■ tests Is indicated by the fact that al- u most invariably dairymen who have had experieince in such competRioas obtain * higher scores than those wbe have not. ^ On the other hand, the contests are used b also to point out to consumers the fact - • that clean milk is more difficult and ex- g l' pensive to produce than dirty jnilk.
