Asks Officials To Clamp Down On Violators New Jersey highway accident ■Utistici lor 1941, released today by Motor Vehicle CortimissioDer Arthur W. Magee, showed that Cape Majb-County had 18 per cent less fatal accidents last year than in 1940. Declaring the alarming statewide" increase in traffic accidents constitutes a threat to the united war effort. Commissioner Magee urged municipal authorities to wage vigorous enforcement of state traffic laws and local ordinances. All previous records having been broken in 1941 with the report of 48,734 accidents and with January of this year pacing the 4,600 mark, a record figure for January, Magee said he:believes that nothing short of’■%U out" enforcement will prevent irreplaceable loss of workers, materials and time. "Never before in history has the accident situation in New Jersey been as serious as today," said the Commissioner. “Even the stoppage of new car production and tire rationing has failed to change the habits of many operators whose dangerous disregard for safety is everywhere apparent, especially during the hours of maximum travel. “Blame it on war jitters or whatnot, conditions are approaching a state of confusion that is making the normally safe street or highway a place of acute danger. “The time has arrived when the authorities must enforce the laws and regulations to the very letter, with no distinction between classes of drivers or their vocations. This is no time to cause an accident or even property damage. Our lives and efforts are needed elsewhere,” Magee said.

A GOOD CUP OF COFFEE STARTS THE DAY OFF RIGHT By Virginia Reynolds, •of Cape May The first coffee tree whs found in Arabia. The story goes that coffee was discovered by a shepherd who saw that his flock was in a peculiar state of excitement and frivolity whenever they browsed on the berries of a certain tree which was later known as a coffee tree. There is no phase of cookery more criticized than that of coffee making. The whole day seems to go right if the breakfast coffee is freshly made and steaming hot COFFEE POINTERS Here are some pointers you would do well to follow to insure that the coffee is fresh, and therefore that you are getting the most for your money. 1. Since it is usually impractical to roast your own coffee, your best insurance is to grind the roasted coffee yourself as you need it 2. Your next best insurance is to purchase your coffee at a store which you have found to have a consistently fresh supply. 3. If the coffee is sold in dated containers, ask if the date means the day the coffee was roasted or the day it was delivered to the store. If it means the day the coffee was roasted, you have a pretty good basis for Judging its freshness. But if it means the day the coffee was delivered to the store, it is not a strict guarantee the coffee is fresh. It is important to remember that deterioration of coffee begins immediately after roasting, regardless of the container. This is true even in the case of vac-uum-packed coffee. COFFEE 'MAKING - SUGGESTIONS To make the best coffee, a heaping tablespoonful of coffee should be used to each three quarters of a cup (6 ounces) of water.-

HAWAIIAN SALAD % cup sugar Vi tap. salt Juice 1 lemon V4 cup water 1 envelope plain gelatin, dissolved in % cup water 1 cup grated pineapple. 1 pint cottage cheese V4 heavy cream, whipped 1 cup nuts, chopped Shrimp or Lobster Bring first four ingredients to a boil; add dissolved gelatin. Cool. Add pineapple and cottage cheese. When cold add cream and nuts; place in ring mould, allow to set. Fill .center with shrimp or lobster, garnish with slices of avacado and tomato. Serve with Thousand Island Dressing. Make day before serving. Serves 10.
